004 - The Hobbits Almost Become Dinner Themselves in "A Shortcut to Mushrooms"
Chris pulls a rain man, the hobbits get roofied, and J. R. R. Tolkien's real name is revealed - it's not what you think it is. This week we discuss book 1, chapter 4 - "A Shortcut to Mushrooms", from The Fellowship of the Ring.
Today's "Food For Thought": Mrs. Maggot's Hearty Mushroom & Bacon Quiche
Frozen or homemade pie crust (deep dish)
1/2 lb bacon (extra thick cut recommended), chopped
1 tsp veg oil
1 quart baby bella mushrooms, sliced
1 onion, diced
4-6 large eggs, beaten (depending on how deep your pie dish is)
3/4-1 cup milk (same as above)
1 cup grated cheddar cheese (or cheese of choice- gruyere or smoked gouda would have been great)
1 bunch green onions, chopped (keep greens separate for garnish)
salt & pepper
Preheat oven to 375F. Prepare pie crust in the pie dish as needed.
Add oil to large pan and add bacon. Cook for about 1 minute.
Add onion and mushrooms to pan. Cook until soft, about 8 minutes. Drain.
Whisk together eggs and heavy cream. Add salt, pepper, and any other desired seasonings (I used some Italian seasoning and garlic powder).
In a bowl or in the pie dish, combine the bacon mixture with cheese and green onions. Once in the pie dish, pour the egg mixture over your fillings until the pie dish is full.
Bake until temperature reaches 160F, about 35 minutes but may vary depending on the size of your pie dish.
Sprinkle some extra cheese and the green onion greens on top, allow to cool for 5-10 minutes and serve.
Notes: This recipe was based on https://addapinch.com/bacon-and-mushroom-quiche-recipe/ but I bumped up the filling to make it more hearty, like a dinner for some hobbits who need comfort food before embarking on a terrifying journey. Bon appetit!
