009 - Bad Things Happen "At The Sign of the Prancing Pony"
Frodo chooses the worst time to do a singing jig, Strider definitely doesn't work for the Middle Earth Parks Service, and finding the truth about Tolkien's love affair with tramps. This week we discuss book 1, chapter 9 - "At the Sign of The Prancing Pony", from The Fellowship of the Ring.
Today's "Food For Thought": The Prancing Pony's Blackberry Tart
This recipe is based on https://simplyscrumptiouseats.com/easy-blackberry-tart/ I picked this recipe because it looked easiest, but had to make some adjustments.
Crust:
1 1/3 cup all-purpose flour
1/4 cup sugar
1/2 tsp kosher salt
10 tbsp unsalted butter, melted
1/2 tsp almond extract
Filling:
4 cups blackberries
1/4 cup sugar
1/4 cup flour
1 tbsp lemon juice
Preheat oven to 400F.
Whisk together flour, sugar, and salt. Add melted butter and almost extract and stir until a dough forms.
Press the dough with your fingers into a 9-inch tart pan and spread it across the bottom and up the sides. Bake it for 15 minutes.
Stir together blackberries, sugar, flour, and lemon juice.
When the crust is done, lower the oven temp to 350F and add the filling. Bake for 30 minutes. If you are using giant grocery store blackberries like I did, you will need to mush them up a bit with a fork to get them to release the juices. Once the filling is bubbly, remove the tart and cool.
Notes: I used a tart pan that was bigger than 9" (that's what he said) and the filling barely covered the bottom. It also would have helped to use smaller blackberries.
